- Allison: Local Barista. Alison previously competed in the US Barista National Championship in 2006 and is looking to regionally judge in 2011. She shared her views on espresso as follows:
“As far as espresso goes, I enjoy tasting single origins but I find they are touchier to pull and often don’t stand up to milk, especially African coffees with their light, bright fruitiness or complex floral notes. In a blend, I am looking for a balanced flavor profile, starting with some sweet fruit which gives way to a syrupy body and a chocolaty finish. Espresso blends like Counter Culture’s Espresso Toscano or Barismo’s The Villain are enjoyable to drink straight (though perhaps not as interesting as a single origin) and also maintain their sweet chocolate flavors in a cappuccino.”
- GiorgioMilos: Master Barista for illy caffe, 2008 Barista Champion of Italy. Has his roots in Trieste, Italy and is touring the US in 2010 on behalf of illy Caffe. He is producing a series of articles for The Atlantic.
